The berries of wild service trees, a close relative of rowanberries, ripen in the Vosges.¬ÝThe berries lie on the mash for three to four months and are then distilled in copper stills.¬ÝThe heart of this distillation, pre-run and post-run are separated, matures two to three years according to the traditional method in the basket bottle in the attic, whereby the temperature differences ensure the correct aging.¬ÝThe warmth that develops the delicious taste takes away any aggressiveness, the cold concentrates and refines the aromas.¬ÝDistinctly sustainable almond and marzipan aromas give the wild service spirit an incomparable note.
